Cleansing Soups

Two super easy, super healthy soup recipes. Adding these into the diet regularly is a warm way to keep cleansing the body during the cold winter months when we tend to comfort eat. See my blog post on Healthy Herbs

They make enough for two with a little left over.

Coriander Soup

A delicious rich creamy soup the sweet potato makes it more filling

What you Need

1 T coconut oil

2 onions chopped

2 cloves garlic finely chopped

1 green chilli - optional

2 sweet potatoes peeled and chopped

50g/2 cups baby spinach

60g/2 cups coriander

half a lemon

3 cups water

Make It

Saute onions and garlic in coconut oil, add sweet potato and water and cook until soft. Place greens and lemon juice in blender add in the hot soup mix and blend until smooth.

Nettle Soup

This is an all round cleansing soup with nettle and celery for the kidneys, fennel for digestion and onion and carrot for the liver.

What you Need

1 T olive oil or butter

1 onion chopped

2 celery sticks chopped

1 bulb fennel chopped

1 large carrot chopped

150g fresh nettles

Make It

Saute onions, celery, fennel and carrot until translucent. Add 3 cups water and cook until soft. Add nettles and let them wilt. Place the soup into a blender and blend until smooth. You may want to add less water for a thicker soup.
