Easy Baked Muesli

I like to keep my muesli really simple which means you can change it up and add your favourite flavours at the end, depending on your mood or what is available. It always worries me when I hear that someone didn't try a recipe because they didn't have/couldn't find/couldn't afford an ingredient with this recipe the sky is the limit.

 

This roasted muesli is a very affordable option and you get so much more than the not so healthy store brought options. It's the nuts that make it expensive. I usually make a double batch of this which keeps us going for a while. Mike usually has it with almond milk I will sprinkle some on top of fresh fruit and yogurt. Sometimes I like to just take a handful to snack on. If you don't have coconut blossom nectar you can also use maple syrup, date syrup or honey, whatever your preference. In the picture below I had some Superfoods mixed berries I used and left out any nuts.

 

What you Need

3 cups rolled oats, you can use gluten free rolled oats if you prefer

1/3 cup melted coconut oil (preferably virgin)

3 tablespoons coconut blossom nectar or honey or maple syrup

1 teaspoon ground cinnamon

1 teaspoon ground ginger, optional

1 cup coconut chips or desiccated coconut

(All my nuts, seeds and dried fruit usually comes from By Nature)

 

Make It

Combine all the ingredients in a bowl and make sure the rolled oats are well coated. Place on a baking tray and bake in a 120 oven for 30 minutes. After 15 minutes toss the muesli and add the cup of coconut and bake for another 15 minutes. Leave to cool the muesli should be crunchy once it has cooled. Then you can add the following:

 

Add:

1/2 cup sunflower seeds

1/2 cup raisins

 

Other Options to Add in:

1/2 cup seeds: pumpkinseeds sesame seeds, hemp seeds

1/2 cup chopped nuts: almonds, walnuts, Brazil nuts, cashews

1/2 cup dried fruit: mango, pineapple, apple, cranberries, goji berries, dates, figs

 
My favourites:

Brazil nuts and dried chopped pineapple

Cashews and dried chopped mango

Almonds and dried chopped apple

Walnuts and dried figs

 

Ideally store in a glass jar or a airtight container. If you want it sweeter add a teaspoon of real vanilla essence
